MIXED BERRY PANCAKE COBBLER
I’ve been trying to change up snacks and breakfasts with easy recipes we already use, inspired by @heather.happykidskitchen ‘Blueberry pancake breakfast cobbler’ I added raspberries to the mix and using my ‘Blender Pancakes’ recipe from my previous reel - this made such a tasty breakfast.
🫐Makes 4 servings or 6 small squares
- 2 handfuls of blueberries (fresh or frozen) or any fruit cut small
- 1 handful of raspberries (fresh or frozen)
- 1 batch of ‘Blender Pancake’ batter (full recipe and method in previous reel)
- 1 banana, preferably overripe
- 150g oats
- 1 egg
- 1/2 tsp cinnamon powder
- 1/2 tsp baking powder
- 50ml milk
- 1 tsp vanilla extract
Preheat oven to 190C. In a small baking dish, add blueberries and raspberries, spread evenly and place in oven. Cook for about 10 mins until fruit softens. Meanwhile make pancake batter, remove fruit from oven and pour batter over the top. Return to the oven for 20-25mins until golden brown. Serve with Greek yoghurt and fresh berries. Once cool can also be cut into squares.

❄️ refrigerate for 2-3 days or freeze for upto 3 months, defrost in microwave for 20-30 seconds
