✨We all need a good lasagne recipe - filling, cheesy and full of goodness this is pure comfort food for me! I had to share this one as its packed with veggies, has a lovely texture with the lentils that I add and its an easy recipe. Monday’s usually call for a ‘fridge-raid’ - I re-made this lasagne recipe and it worked with all sorts of veggies.



Makes 6 servings 

Veggie mixture + lasagne 

- 1 packet lasagne sheets

- 2 tbsps olive oil

- 2 garlic cloves, crushed 

- 1 white onion, finely chopped

- 1 medium courgette, sliced 

- 1/2 aubergine, sliced 

- 2 carrot, chopped 

- 1 red pepper 

- 2 handfuls of broccoli

- 1 large handful fresh spinach 

- Spice mix: 1 tsp paprika, 1 1/2 tsps dried mixed herbs, salt and pepper to taste 

- 1 1/2 cups of red split lentils, washed and drained

- 1 can chopped tomatoes @napolina 

- 400ml water

Cheese Sauce 

- 70g butter

- 2 tbsps plain flour 

- 500ml milk 

- 1/4 tsp ground nutmeg 

- 150g cheddar, grated 


🔸Veggie mixture - on medium heat, add oil to a large pan, add garlic and veggies followed by lentils and chopped tomatoes. Season with spices. Add water, mix, cover and cook for 25 minutes on low heat stirring occasionally to ensure no sticking to the pan. Add more water if necessary.

🔸Cheese sauce - Melt butter in a saucepan, add plain flour. Stir continuously until bubbles and a paste forms (roux), cooking for 2 mins. Add milk gradually, stirring as you go, until you get a smooth sauce. Take off the heat if lumps are forming. Cook for 5-10 mins, stirring continuously, until the sauce has thickened, add nutmeg and cheese and season to taste. 

🔸Layering - in a rectangle baking dish, layer with veggies sauce, lasagne sheets 3 times and finally add cheese sauce and sprinkle with extra cheese and mixed herbs, cover and leave to stand for upto an hour.

Cook in the oven at 180C for 50mins-1hr until golden and bubbling. Cool and serve 


⏰ 1.5 hours 

👶🏼 7+ mashed and served appropriately according to baby’s development 

❄️ refrigerate in airtight container for upto 3 days, once cooked freeze into portions for upto 2 months.
