QUICK STRAWBERRY MUG CAKE
Got less than 5 mins to create a super quick cake in a mug? This is the easiest recipe for a tasty breakfast or snack idea - my 2-minute strawberry mug cake is such a delight and really hits the spot when you’re feeling like something a little different in the morning. Make this dairy or gluten free by using any of the substitutions.
Makes 1 cake in approx 350ml mug
- 30g plain flour/oats flour
- 20g oats/ground almonds
- 1 tsp brown sugar/1 tbsp maple syrup
- 1/2 tsp baking powder
- 1/4 tsp cinnamon powder
- 1 tbsp butter, cold and chopped small/coconut oil
- 4 strawberries, diced
- 4 tbsps milk
- 1 tsp vanilla extract
Add the butter to the dry ingredients, mix in with a fork, add milk, vanilla and combine.
Add a few diced strawberries to the bottom of the mug, place the cake mixture on top and top with remaining strawberries.
Microwave on high for 90 seconds to 2mins, cool slightly before serving.
Top with yoghurt/cream more fresh strawberries and enjoy.
